Banana cranberry cookies
You can omit the cranberries and add whatever you want. Chocolate, raisins, your call; go crazy!
Ingredients
- 1 cup unsalted butter (2 sticks) softened 
- 3/4 cup golden brown sugar 
- 1/2 cup granulated sugar 
- 1 tsp vanilla extract 
- 1 cup ripe bananas (2 bananas) 
- 2 eggs 
- 2 cups all-purpose flour 
- 3/4 tsp baking soda 
- 1/2 tsp salt 
- 1 1/2 tsp cinnamon 
- 1/4 tsp nutmeg 
- 3 cups old fashioned oatmeal 
- 1 cup cranberries 
Directions
- Pre-heat the oven to 350º F. 
- In a large bowl or standing mixer with the paddle attachment, mix 1 cup softened butter, 3/4 cups brown sugar, and 1/2 cup granulated sugar on the and mix on medium. 
- Now mash up 2 bananas add it to the butter mixture. Mix until just combined. - If they are super ripe, I just throw them into the mixer and mix. 
 
- Add the 2 eggs, one at a time, and 1 teaspoon vanilla extract. Beat that on medium until combined, don’t over mix! 
- Add your all-purpose flour, baking soda, salt, cinnamon, and nutmeg. Mix together at low speed until just combined. 
- Once mixed add the old-fashioned rolled oats and your cranberries and mix on low until combined. 
- Line a baking sheet with parchment paper or a silicone baking mat and scoop out mounds of the banana oatmeal cookie dough using an ice cream scooper (if not use a heaping spoonful). 
- Bake at 350º F for 15 minutes. - They will look like they are not done, however, they finish making while cooling so don’t over bake! 
 
- Let cool on rack and enjoy!
