Bacon Egg Bites
My husband is very lazy, sorry babe. And he will not eat all day just so he doesn’t have to cook. He’s a grab a coffee and head off to work kinda guy. So, I make these super easy egg bites and put them in a canteen, so they are nice and warm for him when he is ready to have something to eat in the morning.
Ingredients
- Package of bacon 
- 12 eggs 
- 1/2 cup cottage cheese 
- 1 cup shredded cheese (whatever kind you want) 
- 1/2 tablespoon sea salt 
- 1/2 tablespoon ground pepper 
- Optional: parmesan cheese (to your liking) 
Directions
- Pre-heat the oven to 300 degrees. 
- While it is pre-heating fill a small oven safe dish with about 1/2 cup hot water and place on the bottom rack of the oven. - This will make some steam to keep the egg bites from drying out. 
 
- In a pan cook the bacon. - I will take scissors and cut it up into small pieces. About 1-inch pieces. 
 
- While the bacon is cooking add the rest of the ingredients into a blender (or you can do a bowl with a hand emulsifier). Blend on high for about 20-30 seconds. You want it to be smooth! 
- When the bacon is done cooking set aside. 
- In a muffin pan (mine is a 12 muffin silicone pan) fill up each about 3/4 full. - If your pan is not silicone or non-stick grease the muffin tin with butter, ghee, tallow, or coconut oil. 
 
- Put in a bit of bacon into each and with a small utensil mix around. - If you want max flavor, I suggest not patting your bacon dry before putting into the egg mixture. 
 
- Put the egg bites into the oven and bake for 30-40 minutes. - Just start checking them at the 30-minute mark every 2 minutes to make sure they are cooked through and no longer jiggly. 
 
- When done remove them from the oven and let them rest for about 5 mins before removing from the tin. 
- You will most likely have more egg bite mixture so bake the rest with the above instructions. 
- Keep them in the fridge for up to 4 days.
